Pumpkin Butter
Ingredients:
1 (29 ounce) can pumpkin puree 3/4 cup apple juice 2 teaspoons ground ginger 1/2 teaspoon ground cloves | 1 1/2 cups white sugar 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg |
Directions:
1. | Combine pumpkin, apple juice, spices, and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently. |
2. | Transfer to sterile containers and chill in the refrigerator until serving. |
Pumpkin Bread
Ingredients:
1 cup butter or margarine, softened 3 cups sugar 3 eggs 3 cups all-purpose flour 1 tablespoon baking powder | 1 1/2 teaspoons baking soda 1 1/2 teaspoons ground cinnamon 1 1/2 teaspoons ground cloves 1 1/2 teaspoons ground nutmeg 1 (16 ounce) can solid pack pumpkin |
Directions:
1. | In a mixing bowl, dream butter and sugar. Add eggs; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Stir in pumpkin. Pour into two greased 9-in. x 5-in. x 3-in. loaf pans. Bake at 350 degrees F for 1 hour or until bread tests done. |
